Chicken Salad


This is by far the most requested dish and recipe I receive. Every time I go to any party, pot luck or bonfire, I am told to bring this dish. It is amazingly simple and oh so delicious!


Ingredients: medium shells pasta, Hellmann's mayo, parsley, canned chicken, slivered almonds and celery.

 
Slice celery down the middle lengthwise.
 
 
 
Then slice into small pieces and place into large bowl.
 
 
Break up the chicken with a fork.
 
 
Mince the parsley.
 
 
Throw the chicken, parsley and almonds in the bowl with the celery.
 
 
Enlist some very cute helpers with crazy bedhead from naptime to help you "cut" the celery and parsley with very dull butter knives.
 
 
Reward your helpers with some leftover Halloween candy and admire their super cool hairstyles.
 
 
Meanwhile, cook pasta according to package directions in salted water, drain and run cold water on the pasta to cool.
 
 
Add pasta to the bowl along with the salt and pepper and Hellmann's Mayo. It has to be Hellmann's Mayo, the Chicken Salad God's have spoken.
 
 
Stir well to combine. Cover bowl and refrigerate for at least an hour to overnight.
 
 
Enjoy!
 
CHICKEN SALAD
 
Ingredients:
  • 16 oz. Medium Shells Pasta, cooked and drained
  • 15 oz. Hellmann's Mayo
  • 4-5 stalks of celery, chopped
  • 1 bunch of parsley, minced
  • 2 12 oz. cans of chicken, shredded with a fork
  • 1/2 cup slivered almonds
  • 1 tsp salt
  • 1 tsp pepper
Directions:
  1. Cook pasta in salted water according to package directions, drain and run cold water over it.
  2. Combine all the ingredients in a large bowl. Mix well, cover and refrigerate for at least an hour. Can be kept in the fridge for a few days.
Variations:
  • Omit the pasta and cut Mayo, salt and pepper in half. Throw a few spoonfuls between two slices of bread, add some lettuce and tomato and you have a chicken salad sandwich.
  • Throw in a cup or two of halved grapes and you have a Waldorf style salad, delicious!
